Flat green beans, also known as valore papdi in Hindi, are a popular vegetable in India. They are similar to French beans, but they are flatter and wider. Valore papdi curry is a simple and delicious dish that is perfect for beginners. It is made with just a few ingredients and is ready in under 30 minutes.

Ingredients:

  • 1 pound flat green beans, trimmed and cut into 1-inch pieces
  • 1 tablespoon vegetable oil
  • 1/2 teaspoon mustard seeds
  • 1/4 teaspoon cumin seeds
  • 1 pinch of asafoetida
  • 1/2 inch ginger, grated
  • 1 garlic clove, minced
  • 1 green chilli pepper, minced
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon salt
  • 1/4 cup water
  • Cilantro for garnish

Instructions:

  • Heat the oil in a large skillet or wok over medium heat. Add the mustard seeds and cumin seeds and cook until they start to pop.
  • Add the asafoetida, ginger, garlic, and green chilli pepper and cook for 1 minute.
  • Add the turmeric powder, coriander powder, garam masala, and salt and cook for 1 minute more.
  • Add the flat green beans and water and cook, stirring occasionally, until the beans are tender, about 10 minutes.
  • Garnish with cilantro and serve hot with rice or naan bread.

Tips:

  • If you don't have Asafoetida, you can skip it.
  • If you like your food spicy, you can add more green chillies or a pinch of cayenne pepper.
  • You can also add other vegetables to the curry, such as onions, tomatoes, or potatoes.
  • To make the curry thicker, you can add a tablespoon of yoghurt or cream.

Had a very good meal in Dookan restaurant today. Masala dosa, sambar idly, on request family dosa and the best vadai/vada. Dosa and vadai were so tasty and crispy. Friendly staff.👌😋🌟
